Chalet Chef Job Description – 2022-2023

Your role as chef is to organize the smooth running of the chalet kitchen and to serve exceptional dishes with emphasis on fresh produce and excellent presentation. As our name suggests we serve delicious food to our guests and this is why all our chefs must have a flair for their chosen career and be passionate about cooking. You can plan your own menus within a framework of certain ingredients so this allows our chefs to use their own initiative and skills. Each chef will be working alongside a chalet host who is mainly responsible for housekeeping and hosting duties. However, your roles will overlap and you will need to work as a team in order to run your chalet to the very best of your ability and ensure that your guests are comfortable and enjoy the high standard of cuisine and personal service for which Ski Cuisine is renowned. Our aim is to exceed guest expectation and ensure they have the best holiday experience.  It is important to remember that working as a chef in a chalet is very customer interactive which is perhaps different from working in a restaurant kitchen where you may not have much client contact.

Your responsibilities will include (but not be limited to):

  • Menu planning, shopping, ordering, stock and budget control
  • Ensuring the kitchen is kept clean to the highest standard, paying special attention to kitchen hygiene
  • Meals provided :
    • Breakfast - a choice of continental & a cooked breakfast to order on 5 mornings
    • Afternoon Tea - homemade cakes & biscuits
    • A selection of homemade Canapés, served with pre dinner drinks on 5 nights
    • Dinner - a three course fine dining menu, well balanced with the emphasis on fresh ingredients. A cheese board selection, Coffee served with chocolates served on 5 nights
  • On one of the staff nights off the chef is required to prepare platters and a dessert for the guests to cook their own raclette
  • Working as a team with the chalet host and using them in the kitchen as and when appropriate (eg food prep, washing up during service)
  • All special dietary requirements and children’s meals will need to be catered for alongside the planned menus
  • Working within a generous but precise budget, submitting weekly chalet accounts & menu plans to the Resort Manager
  • Ensuring that the daily menu board is presented to guests each morning at breakfast
  • Hosting the guests when appropriate. Serving & presenting meals and assisting the chalet host when required such as helping with changeover day housekeeping duties and laying afternoon tea.  General chalet duties may include: assisting with chalet cleaning and presentation, snow clearing, chopping wood, keeping outdoor areas clean and tidy etc.
  • Ensuring a warm welcome to your guests on arrival, discuss dietary requests and proposed menus directly with guests. You will need to be ready to shop the morning after arrival day to satisfy guest requests
  • Liaising with the Resort Manager on a regular basis to discuss guest requirements & details
  • Impeccable presentation and a professional but friendly demeanor is expected at all times
  • Remove and dispose of responsibly all rubbish, glass bottles and recycling twice per day after each service


  • Applicants must hold either an EU passport (copy required on application) or a Carte/Titre de Sejour allowing the applicant to work in France
  • If you hold neither of the above but hold a UK passport the applicant must be prepared to undergo the visa application process which will involve various applications (in conjunction with the company) attend visa appointments in the UK and France (possibly out of work hours) medical appointments in France and the applicant must be willing to incur some of the costs involved. UK passport holders must have at least 6 months valid on the expiry date of the passport from the end of April 2023 (i.e. 31/10/2023) A copy of the passport is required on application
  • High level of communication with fluent spoken English and the ability to read English is essential
  • Excellent customer service skills
  • Previous experience of working within catering and hospitality, ideally to include housekeeping
  • Be able to work as part of a team and have a flexible approach to your work and colleagues
  • Reliability, confidence and ability to work independently
  • Able to produce weekly menu plans and accounts for restaurant standard food within a specified budget
  • Aptitude to put the needs of the guests first & flexibility
  • Excellent time management and punctuality
  • Ability to prioritize and plan ahead & work well under pressure
  • Be well presented
  • A mature and professional attitude towards seasonal “culture”
  • Candidates must hold a Level 2 food & hygiene certificate and a copy will be required
  • Assume responsibility for the kitchen, food storage & shopping, food hygiene & safety
  • Previous experience of permanent restaurant work or private catering, ideally for British consumers, as a chef and executing some “front of house” skills
  • A valid medical insurance policy cover for France for the period of employment which must include mountain rescue insurance and repatriation to your home country if you are unable to travel independently following an accident or illness.
  • Covid-19 protocols- All staff are required to be fully vaccinated, according to the fully vaccinated status in France at the time of employment


  • Salary per Contract of Employment- 1572.12 NET per month
  • Fixed term French contract – 40 hours per week
  • Accommodation is provided in a shared room in the staff apartment – for which a refundable deposit of 200€ will be paid by the staff member to Ski Cuisine upon signing the work contract  (Ski Cuisine do not charge staff for accommodation)
  • Food supplied (on work days) one meal per day and breakfast
  • Ski or snowboard equipment for the season
  • Travel – an allowance of €150 will be paid with your first salary, pending successful completion of your trial period.  A return travel allowance of 150€ will be paid alongside your staff accommodation deposit at the end of April 2023 if your staff accommodation is left clean and without damage/major breakages at the end of the season
  • Two days off per week (there will be certain weeks where only one day off is allocated plus two half days of which you will be notified in advance)
  • Outdoor jacket, polo shirts & aprons are supplied, to be worn during morning working hours
  • Please provide your own chef blacks or whites for dinner service
  • Please provide your own knives, suitable black footwear which must be worn in the chalet during working hours.  You will also need suitable outdoor footwear.  You will be able to wash all uniforms in your chalets
